I made the switch to trails a year ago and it's been a game-changer. One thing that took some getting used to was the mental aspect - you need to be more aware of your surroundings and prepared for anything. I'd recommend starting with trails that are more like dirt roads, and then gradually move to more technical ones. As for shoes, I've been using Hoka's and they've been great. Don't expect to set any PRs on trails, just enjoy the change of pace and scenery.
I used to make the same mistake, going out too fast and burning out. Now I start with a slow 5-10min warm-up, then settle into a comfortable pace. Try to negative split your runs, it'll help you build endurance and confidence. And don't be afraid to walk if you need to, it's not a failure!
