I've tried both and for me, Hoka Challenger is the way to go. More comfortable and better for longer runs. Salomon Speedcross is great for shorter, more technical trails, but can feel a bit claustrophobic. Try them on, as mentioned, and see what works for your foot.
Conversational pace is a good rule of thumb. I aim for a pace where I can still talk, but not easily. If I'm feeling too chatty, I know I need to slow down. It's not about being fast, it's about recovering.
