Yeah, I've had similar issues with GPS accuracy on trails. I've found that calibration before a run helps, but it's not a guarantee. I've also noticed that my watch is more accurate when I'm running in open areas. Not much you can do about tree cover, but at least we can commiserate about it. Firmware updates are a must, though. Can't stress that enough.
Joined a local group 6 months ago and it's been great for accountability. Found a group that's chill and supportive, not too competitive. Just be prepared to commit to showing up regularly.
Tempo runs are a good idea, I might have to swap one of my hill repeats for a tempo run. I've found that hill repeats really help with my strength and endurance, but tempo runs can be beneficial too. I'll have to try out your interval workout, 5-7x400m at 3k pace sounds like a good challenge.
